An Amsterdam pub quiz typically runs 2–3 hours across 4–6 rounds: general knowledge, picture/logo round, music or audio, sometimes a themed bonus (movies, sports, geography). Teams are usually 2–5 people, with €3–€5 entry going into a prize pot or bar tab. Most pubs cap teams to keep things fair.
Wednesday nights are the busiest weeknight quiz slot in the city; Sunday quizzes are the most low-key. Solo and pair players almost always get folded into an open team, quiz hosts handle this at the door. Arriving 30 minutes early secures a table.

Most public quizzes are in English. Dutch-language quizzes do exist, they tend to be in older brown bars in Jordaan or Noord, and they say so on the venue Instagram.
Most venues cap teams at 5 to keep the field even. A few cap at 4 or 6. The cap is set per-venue; check the listing.
Almost always 8 PM (20:00) on weeknights, sometimes 7:30 or 9. Sunday afternoon quizzes (3 PM / 15:00) exist but are rarer. Arrive 30 minutes early to grab a table, quizzes fill up fast.
